A flock of 400 Latxa sheep graze freely at the foot of the Urbasa-Andia sierra, producing the excellent milk used to produce D.O. Idiazabal cheese.

Natural products like rennet from the flock’s lambs are used for this purpose. There are no preservatives or artificial colours, which guarantees that the cheeses are 100% natural and of excellent quality.
