Offal, those things that ‘grandma used to cook’ with less noble ingredients such as tripe, cheeks, pig’s or Navarre lamb’s trotters and liver which turn out to be delicious, have always been part of Navarre's gastronomy.
A number of bars in Pamplona are taking part in the Ruta de Casquería or offal route, and also other places in Navarre. So this is certainly the ideal opportunity for the lovers of these dishes to taste some traditional recipes and other more innovative ones.
