Workshops on the Corella-grown red cardoon
Have you ever eaten red cardoon? Did you know that the Romans considered it to be a real delicacy? Well, you also need to know that this strange vegetable is one of the culinary treasures of winter in Navarre and that the farmers of Corella are real experts in growing red cardoons. Two months before harvesting, they cover the whole plant with earth, creating mounds that can be up to 2 metres high. This supplies the plant with a whole combination of nutrients and gives it its characteristic taste.
