We invite you to enjoy a total pacharán experience, taking you to one of Navarre's distilleries, Zoco in Dicastillo. There, strolling among blackthorn bushes that hold the essence of the liqueur and exploring the historic gardens of the Palace of the Countess of Vega del Pozo, you can delve into its fascinating history. The distillery opens its doors to show you its artisanal production process, using 100% Navarrese sloe berries macerated in natural anisette, without any added colourings or flavourings.
You will discover then that this tour is not just about seeing but also about touching, smelling and tasting. You even get to make your own pacharán! And taste it with chocolates that enhance its flavour. To round things off, there’s a cocktail workshop where you get to reinvent this magical liqueur with surprising combinations. The sloe: the soul of pacharán
Small and dark blue, the sloe berry emerges amidst thorns, brimming with secrets. At first, it appears harsh and defiant, and maybe that's why, centuries ago, someone decided to tame it with strong anise-flavoured alcohol. That's how pacharán came into being.
The truth is the berry of the blackthorn (Prunus spinosa) has always been a survivor. Hedgerows and poor, wind-lashed and frost-bitten soils are its comfort zone. And although its origins extend across Europe and Asia, it finds its most recognised identity in Navarre, concentrated in the Tierra Estella region.
The magic happens when it's macerated in anisette: the liquid turns a deep red and the berry’s gentle sweetness emerges, along with a hint of bitterness and that characteristic warmth at the end.
An origin with centuries of history
Pacharán isn't a modern invention and that, without a doubt, makes it even more special. Admired for its flavour and digestive properties, it was already being served in the Middle Ages!
Its name comes from the Basque language: Pattar (spirit) and aran (sloe). Of humble origins, it wasn't invented by master distillers or high-ranking alchemists but by peasant hands seeking to bring some flavour to everyday life. For centuries, it was a homemade drink, prepared in Navarrese homes using recipes passed down through generations. There were no additives or artificial ingredients: just sloes, aniseed and strong alcohol.
In 1956, Navarre took the leap to industrial production without losing the drink’s artisanal essence. Over time, what began as a tradition became a symbol of typical Navarrese gastronomy. In the 1980s, pacharán made the move from family kitchens to Navarrese distilleries and obtained protected status. With the safeguard of the Protected Geographical Indication (PGI) Pacharán Navarro and the Regulatory Council which guarantees its authenticity, it remains true to its essence: simple, honest and playing with contrasts.
A unique character for an exceptional pairing
Thanks to its fruity character and touch of aniseed, pacharán pairs especially well with traditional Navarrese dishes that share its heritage and authenticity. This is the case with our Navarrese cheeses, such as Idiazabal, whose intensity contrasts with the sweetness of pacharán to perfection.
Or Roncal, a cured cheese with character, balanced by the fruity freshness of the liqueur.
And what about combining it with cured meats and sausages? If you pair it with txistorra from Navarre, you'll discover it's a wonderful match, because the pacharán softens the spicy greasiness of the sausage. Or with ham, whose salty, umami flavour harmonises with the acidity of the sloe berry.
When it comes to desserts, pacharán is also a top choice because it's a magnificent complement to traditional Navarrese desserts and confectionery such as our creamy, slightly sharp cheesecake; goxua, made with cream, sponge cake and custard; or rosquillas (doughnut-like pastries), ideal for enjoying with a cold shot of pacharán. Almonds, whose toasted flavour goes very well with the flavour of the sloes, also pair well with this Navarrese liqueur, And don’t forget chocolate, whose nuances are enhanced by pacharán like nothing else.
Finally, the drink also finds its way into the most creative dishes of Navarrese gastronomy, including our miniature gourmet pinchos: duck foie gras with a pacharán reduction, for example, or pacharán ice cream with red berries or nuts. These combinations not only respect tradition but also enhance the sensory experience of pacharán, elevating it to a whole new level.
