Spring Fair in Elizondo

The Spring Fair in Elizondo is the first one in the year for the cattle farmers and shepherds in the district of Bidasoa. Here they strive to show their best specimens of native cattle. In the morning, the Plaza del Mercado square is the venue for the Latxa breed Ram Competition, while the limelight is also shared by the Pirenaica (Pyrenean) breed of cows and the Pottokas (small horses native to the Pyrenees of the Basque country).
 
In addition to the cattle fair, a range of activities are organised such as the numerou stalls selling artisan wares and agri-food products from the Baztan Valley, a ceremony for the presentation and cutting of the first cheese made with sheep's milk of the year, as well as a degustation of Baztan zopa, the typical broth from the Baztan Valley.
