The "Gilda" is an iconic Banderilla (tapa on a cocktail stick) combining olives, chilli peppers, anchovies and other pickled food. It's one of the traditional pintxos on offer in the typical bars, the ones that resist the passage of time, far from the trends and fads of modern bar counters. The Gilda route allows you to take a tour of some of the bars in Pamplona and other places in Navarre that still serve this appetizer that is so typical of our region and that lends itself to many different combinations.
