Guided tour of the Bikain cheese dairy

In Etxarri, in the heart of the Larraun Valley, the Bikain family has spent generations crafting PDO Idiazabal cheese in the style of the Aralar shepherds: using only raw milk from their own sheep, taking no shortcuts and respecting traditional methods and times. The result is a cheese that’s truly alive, possessing a distinct character and a flavour that varies with the seasons, much like wine.

A guided tour of the Bikain cheese dairy takes you through their facilities, where you can see the sheep, learn about the entire production process, from milking to ageing, and finish with a tasting of their range of cheeses. It’s an experience designed for families, groups and anyone curious about what goes into making a fine artisanal cheese.

The Larraun Valley is surrounded by nature, making a visit to Bikain the perfect addition to a broader getaway in northern Navarre. The Larraun River features a beautiful trail winding through pastures and forests of centuries-old trees, a perfect walk to enjoy before or after your tour. And if you’re interested in exploring more PDO Idiazabal cheese producers, we offer a route dedicated to Navarrese cheese which connects producers and landscapes across the region.
